Ten Delicious Zucchini Recipes for Everyone with an Abundance of Zucchini!

By the time you're reading this I'll be in San Francisco attending the 2008 BlogHer Conference, where I'm looking forward to meeting a lot of other food bloggers. Before I left town I noticed my garden was about to start producing zucchini like mad, and since I'm not doing any cooking this weekend, I thought I'd do a round-up of my favorite zucchini recipes for everyone who has an abundance of zucchini. First up is this super easy Grilled Zucchini, which was a recipe I first shared when I leaving town to attend BlogHer 2006 in San Jose.

Stuffed Zucchini with Brown Rice, Ground Beef, Red Pepper, and Basil is one of my favorite things to make with the round 8-Ball Zucchini.

I just updated this recipe for Roasted Zucchini with Green Onions, Feta Cheese, and Basil, and even my slightly veggie-indifferent dad pronounced it a hit. Be sure not to leave out the garlic!

Long before Remi made this dish so popular, I used some of my garden zucchini and yellow squash to make Ratatouille Wanna-Be.

A new favorite from last summer was this Parmesan Encrusted Zucchini, a "once-in-a-while" treat, but great for special occasions.

If you have a garden so you can pick really baby zucchini and yellow squash, this Roasted Baby Summer Squash with Feta and Thyme is a wonderful dish.

One of my absolute favorite zucchini recipes from last summer was this Cheesy Zucchini with Garlic and Parsley from the Earthbound Farms cookbook.

Another great zucchini fave from last year was Sauteed Zucchini with Spinach and Basil Pesto. If you don't have a garden with basil growing, you could make this with purchased pesto.

My most unorthodox zucchini recipe, but an absolute favorite in the Denny family is our mom's version of "Creamed" Zucchini which uses powdered coffee creamer. My nephew's wife recently called me to find out how to make this and when I said "It's on the blog" she said "I know, but I'm at the grocery store."

Finally, a delicious way to eat raw zucchini is this Zucchini Salad with Tomatoes and Basil. Make this one when you have fresh vine-ripened tomatoes and it will be delicious.

I love these. I just sauteed some zucchini and crookneck squash this week, with chopped onion, and my husband and I were both thrilled with how much we fell in love with it. Can't wait to make more, and thanks for the ideas!

Great recipes Kalyn. My favourite is the raw zucchini salad at the end. I love raw veggies. I'm very jealous of you attending the Blogher conference! I wish we had something like that over here so I could meet up with lots of other food bloggers. I must get something organised!

I'm a long time reader, but rare poster. I wanted to let you know that I have started cooking and love finding recipes on your site. I even amazed myself this weekend by taking some of what you and another site had to make my own Eggplant Lasagna and to my surprise this entirely veggie lasagna turned out great!!
