South Beach Recipes of the Week #22: Phase One Vegetables and Salads

It's Saturday, time for South Beach Recipes of the Week, those yummy, low glycemic index recipes I discover on my favorite food blogs. Since Kalyn's Kitchen is doing phase one recipes for the month of January, these are all phase one salads and vegetables, plus a bonus recipe that might become one of your favorite salad dressings. Looking at these photos, isn't it easy to see why I love the South Beach diet so much. There are so many good things here that might be forbidden foods on othe diet plans. No worries if you're not at all interested in dieting, you'll still love eating this food!

The minute I spotted this recipe for Ricotta and Sundried Tomato Stuffed Onions and Rachael's lovely photograph on Fresh Approach Cooking, I was enchanted with the sound of it. I love onions, and this looks like a perfect side dish.

I thought Asparagus with Tomato and Avocado Dressing from The Culinary Chase was such an interesting dish, all the more so when you realize this is from a blog in Hong Kong. Is it a salad or a vegetable? You decide, but do give it a try!

Next we travel to the Phillipines where ChicaJo from 80 Breakfasts indulges her love of chanterelles with this Wild Mushroom Saute. It doesn't get much better than this, and you can use other mushrooms if the luxurious chanterelles are not available.

Now we're off to Melbourne, where this absolutely wonderful looking Mediterranean Salad was a Weekend Herb Blogging offering from Cook (almost) Anything At Least Once, and since I'm longing for summer, it really made me sigh. If you can use Haalo's fabulous-sounding Marinated Fetta in the dish, so much the better! (Read Haalo's post to see why it's Fetta and not Feta.)

Finally, the bonus recipe I promised, a simple but wonderful sounding Honey-Mustard Dressing for Tossed Salad from French Kitchen in America. I bought some buttermilk this week, and I'm planning to make this today. If you're a South Beach Dieter, don't be worried by the word "honey" in the title; there's only one tablespoon of honey mustard here, and even the South Beach Diet cookbooks use a tiny amount of honey or sugar occasionally as a flavoring. (Use full-fat mayo for South Beach. It's made with soybean oil, which is considered a "good fat" and low-fat and fat free mayo often contains sugar.)

I've got two phase one recipes up on the main page of our site right now... One is from the SB Party cookbook, but other is an original. ;-)

The asparagus and avocado recipe looks really interesting! You just can't have too many asparagus recipes!!

Yum! All those veggies look so refreshing. I'm craving those sauteed mushrooms right now. The other night I made my favorite version of a Mediterranean Salad. It's from I Like You: Entertaining Under the Influence by Amy Sedaris. It's Tula's Country-Style Greek Salad. I'm not sure if it's okay for the South Beach Diet though. It is SO yummy and fresh.

It sounds like I'm not the only one who thought these recipes looked especially good. Also I love it that other people are posting South Beach friendly recipes. (Blest, I love that book, and Rachel, your Greek salad looks perfect for South Beach.)
