Vegetarian Dishes

(This page is for vegetarian main dishes or salads which I would eat as a meal. Dishes which I believe are vegan are marked (v). Dishes not marked as vegan may contain cheese. Some dishes contain chicken stock, which can easily be substituted with vegetable broth. If you find a dish marked vegan which shouldn't be, please let me know.)

There are also many vegetable side dishes in Vegetables.

For the benefit of those following The South Beach diet, notations after each recipe listing indicate Kalyn's opinion as to which phase of the diet each that recipe can be used for.

For low glycemic recipes, substitute coconut sugar 1:1. Coconut sugar has a glycemic index of 35 (as compared to cane sugar's index of 50!) Hi Kalyn,

I think vegans also restrict themselves from onions and garlic and parsley. These spices will hurt their gastric because they do not take meat??

i don't know if it's a myth, but that is the diet that my own vegetarian friends keep to. :) maybe you will like to look into it?

maybe it's because we're from different continents? (i'm from asia, btw) and i would like to take this chance to tell you: I REALLY LOVE YOUR RECIPES! thank you!

Angez, I haven't ever heard anythign like that, and I don't think it's true for vegans in the U.S.
